Dr. Mickey Rubin is the Executive Director of the Egg Nutrition Center (ENC), the science and education division of the American Egg Board. Dr. Rubin has served in his current role since 2018. Prior to joining ENC, Dr. Rubin had a variety of roles in the food industry starting at Kraft Foods where he was a senior nutrition scientist, as well as National Dairy Council where he served as Vice President of Nutrition Research. Dr. Rubin earned a Ph.D. from the University of Connecticut, where his research interests focused on human nutrition, exercise physiology, and endocrinology.
